The Old Skillet is published for general information, education and enjoyment. Every recipe, tip, warning, timing and temperature is a recommendation based on ordinary domestic cooking. It is not professional culinary, nutritional, medical or food-safety advice, and it is not a substitute for your own judgement.
Your kitchen, your judgement
Ovens run hot and cold, pans conduct differently, ingredients vary by season and region, and altitude changes both boiling point and baking. Stated times and temperatures are starting points: cook to the sensory cues and, where a safe internal temperature is given, verify it with a thermometer rather than the clock. Hot oil, open flame, pressure cookers, sharp knives and boiling sugar can cause serious injury. Supervise children and never leave hot fat unattended.
Food safety and higher-risk groups
Some recipes use raw or lightly cooked eggs, raw or rare meat and fish, unpasteurised dairy, sprouted seeds or cured products. These carry a recognised risk of foodborne illness. If you are pregnant, feeding an infant or young child, over 65, or living with a weakened immune system or a chronic condition, follow the guidance of your national food-safety authority and your doctor in preference to anything written here. Honey must not be given to children under twelve months.
Allergens, intolerances and coeliac disease
Allergen labels, dietary tags and coeliac notes are indicative and may not be exhaustive. They describe a recipe as written, not the specific brands you buy, and they cannot account for cross-contamination in your kitchen, in a shop, or in a factory. Substitutions and regional variations change the allergen profile. Asafoetida, soy sauce and commercial spice blends are the usual hidden sources of wheat. If a reaction would be serious, verify every ingredient yourself and do not rely on this site as your only source.
Traditional, restricted and hazardous ingredients
This collection documents traditional dishes honestly, including ingredients that require specific preparation to be safe — among them cassava, bamboo shoots, keluak nuts, raw candlenuts, taro leaves and kava — and, for cultural and historical completeness, a small number of preparations that are hazardous or prohibited and are expressly not recommended. Documenting a dish is not encouraging you to make it. Certain ingredients, foraged species and home preparations are regulated or illegal in some countries; complying with the law where you live is your responsibility. Never eat a foraged plant, fungus or shellfish identified only from a photograph or description.
Alcohol
Recipes containing alcohol are marked. Observe the legal drinking age where you live, do not drink if you are pregnant or driving, and do not serve alcohol to children. Notes on distillation, methanol and fermentation are provided to correct dangerous folk beliefs, not as instructions; producing spirits at home is illegal in many jurisdictions.
Estimated figures: nutrition, conversions and scaling
Nutrition values are independent per-serving estimates, not laboratory analysis, and they will not match your ingredients exactly. Cup-to-gram conversions use standard reference densities and vary with how loosely a cup is filled. Scaled quantities are arithmetic; the accompanying notes on what does not scale are guidance, not a guarantee.
